生产制备方法及用途展开↓

合成制备方法


1.以猪胰为原料制取。取3kg猪胰脏绞碎后经三氯甲烷和丁醇二次脱酯,再经乙醇抽提,然后冷冻干燥制得365g胰脂酶。

用途


1.可用作酶制剂。主要用于干酪制造(脱脂和使产品产生特殊香味,最高用量100mg/kg)、脂类改性、脂类水解,以防止某些乳制品和巧克力中的油脂变质。是使牛奶巧克力和奶油蛋糕产生特殊风味的优良制剂。加入蛋白中以分解可能混入的脂肪,从而提高其发泡能力。酒类酿造时加入脂肪酶能促进酒的发酵,增加酒的香味。

2.是一种霉菌的脂肪酶,是采用脱氧核糖核酸重组体技术生产的。它在碱性条件下一般p H值不超过1 2,并在较宽的温度范围下有效,可用于洗衣、工业及餐具洗涤。
