制备方法


在食品工业中作膨松剂、面团调节剂、缓冲剂、组织改良剂、固化剂、营养增补剂、螯合剂等。

合成制备方法


1.石灰法
用石灰中和食品级磷酸,控制终点为Ph值3.2,即得磷酸二氢钙。
CaCO3+2H3P04→Ca(H2PO4)2+H20+CO2↑
2.磷酸氢钙法
由食品级磷酸氢钙或食品级磷酸三钙与食品级磷酸溶液中和,控制终点为Ph值3.2;再经浓缩、结晶即得产品。
CaHPO4+H3P04→Ca(H2PO4)2

3.采用磷酸氢钙法。将食用磷酸氢钙溶解于食用磷酸中,控制pH值在3.2左右时生成磷酸二氢钙,经浓缩、冷却结晶、离心分离、干燥,制得食用磷酸二氢钙成品。其反应式如下。

4.将磷酸和氢氧化钙混合,并调节反应液ph值为3.2左右,进行反应:

反应结束后,过滤,滤液经蒸发浓缩,在0℃时冷却结晶,离心甩干,结晶用丙酮充分洗涤后,风干即可。

 

用途简介


用途


1.用作膨松剂、面团调节剂、缓冲剂、营养增补剂、乳化剂、稳定剂等品质改良剂,有提高食品的络合金属离子、pH值、增加离子强度等的作用,可以改善食品的黏着力和持水性。用于面粉、蛋糕、糕点、焙制品、油炸食品、饼干、奶粉、冷饮、冰淇淋等。我国规定,用于面包、饼干、发酵粉,最大使用量4.0g/kg(以磷酸计);固体饮料8.0g/kg;小麦粉可按生产需要适量使用。

2.广泛用于水产养殖动物及畜禽养殖动物的饲料添加剂。饲料中的添加量一般在1%~2%。

3.在食品工业中用作焙粉发酵剂、酵母养料、钙质的营养增补剂和疏松剂。也可用作饲料添加剂。

4.用作分析试剂,食品和饲料添加剂及塑料添加剂。
